This week we made Lemon and Honey Chicken Stir Fry with Veggies and Noodles. The scent throughout the room was delicious. 3 steps and 30 minutes is all you need for this quick and easy stir fry! If you are interested in the recipe, it is included for you below.
Prep: 15min
Cook:15min
Serves: 4
Ingredients
60ml honey
2 tbs Light soy sauce
2 tbs lemon juice
2 teas cornflour
1 tbs sesame oil
6 chicken breast, chopped
1 red onion, cut into wedges
5cm piece ginger, peeled, cut into matchsticks
1 garlic clove thinly slices
2 bunches baby broccoli cut into 5cm pieces
300g snow peas
2 cups (300g) steamed rice
Method
1. Combine honey, soy sauce, lemon juice and cornflour in a small bowl
2. Heat 1 teaspoon of sesame oil in a wok over high heat. Stir fry one third of the chicken for 2-3 minutes or until golden brown and cooked through. Transfer to plate. Repeat in 2 more batches with remaining chicken and another 2 teaspoons of sesame oil.
3. Heat remaining oil in the wok. Stir fry onion, ginger and garlic for 2 minute or until lightly browned. Add baby broccoli and snow peas. Stir fry for 1 minute or until bright green. Return chicken to wok with honey mixture. Stir fry for 2-3 minutes or until sauce boils and thickens. Divide rice and stir fry among bowls.
If you, like us, choose to use noodles instead of rice, simply cover the noodles in a bowl with hot water and allow them to cook. It only takes a few minutes, and stir them into the wok with the rest of the ingredients.
