Ninjas is back! This week, our team made Zucchini Slice Frittata. We wore chefs hats and our new Nutrition Ninja badges as we grated and sauteed our ingredients. We continue to work on and build our culinary skills. The recipe for this yummy meal is below. Zucchini Slice Frittata

Serves: 4
Ingredients
1 brown onion, finely chopped
100g rindless smoked bacon
6 eggs
1 cup plain flour
1 teaspoon baking powder
2 tablespoons extra virgin olive oil
500g Zucchini, coarsely grated
1 cup kasseri cheese, coarsely grated (We used normal shredded cheese)
2 teaspoons fresh dill, chopped
Method
1. Preheat the oven to 180 degrees fan forced. Spray a 20cm ovenproof frying pan with oil.
2. Cook onion and bacon in a non-stick frying pan over high heat, stirring often, for 5 minutes or until crisp. Cool slightly.
3. Whisk the eggs in a large bowl. Add the flour, baking powder and olive oil and whisk until smooth. Add the bacon mixture, zucchini, cheese and dill. Season. Pour into prepared pan and bake for 50 minutes or until golden and cooked through. Top with extra dill.
